Apple Pie Breakfast Jar

This Apple Pie Breakfast Jar has become one of my favourite meal-prep breakfasts. With creamy steel-cut oats, protein-rich yoghurt and gently stewed cinnamon apples, it’s a breakfast that feels a little indulgent while supporting your health goals. I love making it ahead of time so breakfast is ready to grab from the fridge on busy mornings.

There’s something so comforting about the flavours of apple, cinnamon and vanilla. They bring all the warmth of a homemade apple pie, but in a nourishing breakfast that will leave you feeling energised and satisfied.

Whether you enjoy it straight from the fridge or allow it to come to room temperature before eating, this recipe is a simple reminder that healthy eating can be both delicious and practical.

Nutritional Benefits

Steel-cut oats are a wonderful source of complex carbohydrates and fibre, helping to provide steady energy throughout the morning. Soaking them before cooking can also make them easier to digest while maintaining their delicious chewy texture.

Ingredients

Oat Layer:

  • ½ cup cooked steel-cut oats (prepared in advance)
  • 30g (1 scoop) vanilla protein powder
  • ½ tsp vanilla bean paste or vanilla extract
  • ½ tsp ground cinnamon
  • ½ cup unsweetened almond milk (or enough to reach your desired consistency)

Stewed Apple:

  • ½ small apple, peeled and diced (or ¼ large apple)
  • 1–2 tsp water

Optional: Add 1 scoop (11g) collagen powder to the oat mixture for an additional protein boost.

Method

Place the diced apple and water into a small saucepan. Cook over a low heat for 4–5 minutes, stirring occasionally, until the apple is just tender but still holds its shape. Set aside to cool slightly.

In a bowl, combine the cooked steel-cut oats, vanilla protein powder, vanilla, cinnamon and almond milk. Stir until smooth and creamy, adding a little extra almond milk if needed.

Spoon ¼ cup of the oat mixture into the bottom of a serving jar or glass.

Add a layer of Greek yoghurt (or coconut yoghurt).

Spoon the remaining ¼ cup of the oat mixture over the yoghurt.

Top with the stewed apple and finish with a sprinkle of cinnamon.

Enjoy immediately or refrigerate until chilled.

Serving Suggestions

Enjoy straight from the fridge for an easy grab-and-go breakfast.

Sprinkle with chopped walnuts or pecans for extra crunch and healthy fats.

Add a few chia seeds for an extra boost of fibre.

Pear also works beautifully in place of apple when it’s in season.

Store in an airtight jar in the refrigerator for up to 3 days.
