Seafood Marinara

Seafood Marinara is one of my hubby’s favourite dishes, full of omega-3 fatty acids, minerals and vitamins. It is super fast and easy to make even though it looks fancy! Traditionally served with spaghetti, I opted for zucchini noodles instead. Super delicious!

Ingredients

(serves 2)

  • 500g marinara mix
  • 6 garlic cloves, chopped
  • 10ml brandy (optional)
  • 1 T coconut oil
  • 1 red onion, diced
  • 1 tomato, diced
  • 6 shallots, sliced
  • 2 T sundried tomatoes
  • 2 small hot chillies
  • 2 T sliced olives
  • Salt and pepper to taste
  • 1 tin coconut cream (400ml)

Method

Heat a large pan over med – high heat with 1 T coconut and sautΓ© marinara mix with half the garlic and add red onion for one minute.

Pour in the brandy (if using) & flame. (for this you will need to ignite the liquid in the pan, using either a match or lighter, the alcohol will burn off)

Add the rest of the garlic and remaining ingredients and simmer for two minutes. To thicken the sauce use a mix of 1 tsp arrowroot powder & 1-2 tsps water and mix through marinara mix.

Serving Suggestions

Serve on a bed of zucchini noodles.
