Cauliflower Rice

Cauliflower Rice isΒ such an awesome alternative to the grain rice. Light and fluffy with a little bit of crunch! It only takes 5 minutes to prepare and delicious as a side dish or for making fried rice. Using a processor gives it more of a couscous texture a great addition to any meal.

Ingredients

(serves 4)

  • 1 large cauliflower
  • ground sea salt and ground black pepper
  • 2 cloves fresh garlic – crushed
  • 1 T coconut oil (if using a pan)

Preparation

Check cauliflower and make sure there are no brown or black spots on it and if so, remove with a paring knife. Remove all leaves and chop into florets. I prefer to hand chop into rice size pieces or you can, working in batches, pulse a few florets at a time in a food processor and/or grater until the pieces are the size and shape of rice (be careful not to over-blend!) it will look like couscous.

Method

Place cauliflower, salt, pepper and garlic in a microwaveable safe dish and cover (do not add water). Microwave on fresh vegetable soft setting if automatic or on high for 3 mins. Rest with lid on for 5 mins.Β  Remove and enjoy with your favourite dishes.

If you do not use a microwave you can sautΓ© in a frypan.Β Heat a large pan over medium-high heat and swirl around about a tablespoon of coconut oil to coat the bottom or you can use oil of your choice and once the oil has heated, add the cauliflower and garlic and cook it for about 5 minutes, or until it’s softened. Season with salt and pepper to taste.
