Coleslaw is one of my favourite salads as it is so colourful and is a favourite addition to the Aussie BBQ in summer or winter! Also goes well with pulled pork in a wrap!
Coleslaw
Ingredients:
1/4 white cabbage shredded
1/4 red cabbage shredded
1 red onion finely sliced
1 large carrot grated
1/2 red capsicum finely sliced
Dressing:
3 T whole egg gluten free mayonnaise or vegan mayonnaise
1 T Dijon mustard
1/2 T rice malt syrup
Zest & juice of 1 whole lemon
Salt & pepper to taste
Method:
Place the coleslaw vegetables in a serving bowl; I prefer to add the dressing before serving or you can pour mayonnaise dressing over top and then mix through with a spoon. Cover the bowl and place in the fridge for at least half an hour to soak up the flavours.
