Decadent Chocolate Brownie

This Decadent Chocolate Brownie is everything a chocolate lover dreams of — luxuriously self-indulgent, rich, and lavish in taste, yet made with simple, nourishing ingredients. Sweetened naturally with Medjool dates and loaded with deep, dark chocolate, it delivers a gooey, satisfying bite.

Nutritional Benefits:

Medjool Dates: A natural source of energy and fibre, dates also provide potassium and magnesium, supporting heart health and digestion.

90% Dark Chocolate: Rich in antioxidants (flavonoids), dark chocolate may help reduce inflammation and support mood and cognitive function.

Coconut Oil: Contains medium-chain triglycerides (MCTs) that are quickly absorbed and used as energy — great for a quick, nourishing boost.

It’s one of my husband’s all-time favourites — and I hope it becomes one of yours too. Perfect for a Father’s Day celebration, a weekend treat, or any time you want something special without compromising your health goals.

Ingredients

(serves 9-12)

  • 150g 90% dark chocolate
  • 8 Medjool dates
  • 150g coconut oil
  • 2 T coconut flour
  • 4 eggs
  • 1 tsp vanilla paste

Preparation

Preheat oven 180°C / 350°F / Gas Mark 4 and line a square cake tin with baking paper.

Method

Put dark chocolate into a food processor and blitz until it resembles a bread crumb consistency. Add the dates and blend until it forms a paste. Add the coconut oil, vanilla and eggs and blend to combine. Mix in coconut flour until it is a thick gooey consistency. Evenly distribute into cake tin and bake for 15-17 mins. It is ready when you insert a skewer, and it comes out clean.

Serving Suggestions

Delicious served with a dollop of coconut cream or dulce de leche.
