This fruit mince filling recipe is super easy to make and a much healthier version than what you get in the stores. I much prefer homemade than store bought don’t you?
1 green apple
1 cup organic sultanas
1/2 cup organic dried cranberries
4 medjool dates, seeded and finely chopped
1 large orange, juice and zest
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp ground ginger
1 cup coconut water
Mix all ingredients together in a saucepan, cover and simmer over a low heat for 30 minutes, stirring occasionally. Make sure it is a slow gentle simmer. You can add more coconut water to keep the mixture moist and simmer for a further 30 minutes.
