Mango Nice Cream

Mango Nice Cream is a naturally sweet, tropical treat that’s as refreshing as it is nourishing—ready in minutes, with no added sugar. When the weather warms up and you’re craving something cool and satisfying, this Mango Nice Cream ticks all the boxes. It’s made entirely from whole fruits and just a splash of plant milk, creating that classic ice cream texture—without the dairy, refined sugar, or artificial additives.

This is one of my favourite ways to enjoy a summer-friendly dessert that leaves you feeling light, energised, and happy. You can serve it immediately as a soft-serve, or freeze it a little longer for a scoopable texture. It’s also incredibly easy to customise with flavours like lime, mint, or a hint of vanilla for something extra special.

Nutritional Benefits:

Mangoes and bananas are packed with natural sugars, fibre, and essential vitamins like vitamin C,(2) A, and B(1)—supporting immune health(3), energy production, and glowing skin.

Coconut milk adds a touch of creaminess and healthy fats to aid digestion and promote long-lasting satisfaction without the heaviness of traditional ice cream.

Ingredients

(serves 2)

  • 2 cups ripe mango chunks, frozen
  • 1 ripe banana, frozen
  • 2–3 T coconut milk (or other plant-based milk)
  • Optional: a squeeze of lime juice, a few mint leaves, or a dash of vanilla extract

Preparation

Freeze your fruit in advance: For the best texture, use very ripe mango and banana, chop them into chunks, and freeze overnight in a single layer on a tray before transferring to a container or freezer bag.

Let it sit briefly before blending: If your frozen fruit is very solid, let it sit at room temperature for 2–3 minutes to soften slightly before blending.

Method

Place the frozen mango and banana into a high-powered blender or food processor.

Pulse until the fruit begins to break down.

Add 1–2 T coconut milk and continue blending until smooth and creamy, scraping down the sides as needed.

Serve immediately for a soft-serve texture or transfer to a container and freeze for 1–2 hours for a firmer scoop.

Serving Suggestions

If you’re serving it straight away as soft-serve, it’s perfect for two. If you’re freezing it for scooping later or serving it with toppings like toasted coconut, fresh mango, or a drizzle of nut butter, you might stretch it to three smaller bowls.
