Peanut Butter Choc Chunk Biscuits

These peanut butter choc chunk biscuits are the bomb! A delicious combination of peanut butter and dark chocolate chunks will satisfy any taste buds.

Ingredients

(makes about 24 biscuits)

  • 2/3 cup almond flour
  • 1 tsp baking powder
  • 1 tsp vanilla powder
  • 1 tsp cinnamon
  • 1 cup peanut butter crunchy or smooth, your choice! (I use crunchy)
  • 2/3 cup rice malt syrup
  • 2 eggs
  • 2/3 cup dark chocolate chunks (I use Lindt 90% dark chocolate)

Preparation

Preheat oven 180C/350F/Gas Mark 4. Line two baking trays with baking paper.

Method

In a medium sized bowl mix dry ingredients together until combined. In a mixing bowl using an electric mixer or food processor beat, eggs, peanut butter & rice malt syrup until smooth about 2 mins. Once combined gradually add dry ingredients and mix well. Stir through choc chunks.

Using a soup spoon, spoon the mixture onto prepared baking trays and cook for 11 mins or until golden. Allow to cool on trays before transferring onto a wire rack.
