Ingredients

(serves 2)

  • 150g cashews (soaked overnight and rinsed well in the morning)
  •  150g raspberries (fresh or frozen thawed)
  •  40mls lime or lemon juice
  •  pinch sea salt
  •  2 tsp vanilla bean paste
  •  1/4 cup honey
  •  1/4 coconut oil
  • 60g (2 scoops) vanilla protein powder
  • 1/2 cup almond milk

Preparation

Soak cashews overnight and rinse well in the morning.

Method

In a high-powered blender, process the cashews, raspberries, lime or lemon juice, salt, protein powder, honey, coconut oil and vanilla paste until the mixture is smooth and creamy. Pour the berry mixture into small glasses and refrigerate, until set, preferably overnight.

Serving Suggestions

Place a dollop of coconut cream, a sprinkling of dried raspberry and fresh raspberries and you’re ready to enjoy.
