Ingredients

  • 500g Brussels sprouts cut into half
  • 5 garlic cloves, roughly chopped 
  • 4 slices free-range bacon, cut into bite-size pieces
  • 1/2 lemon, juice of 
  • 2 tablespoons coconut oil
  • 1 tsp dried chilli flakes
lime juice, to serve (optional) 
  • salt & pepper to taste
  • 1 handful fresh flat-leaf parsley, roughly chopped

Preparation

Preheat the oven to 200°C / 400°F / Gas Mark 6.

Method

In a large bowl, combine the Brussels sprouts, garlic, bacon pieces, coconut oil, and chilli flakes. Season generously with sea salt and black pepper. Toss until everything is well coated.

Spread the mixture evenly onto a large roasting tray, ensuring the Brussels sprouts are in a single layer (this helps them brown nicely).

Roast for 30–35 minutes, flipping the sprouts and bacon every 10 minutes so they cook evenly and crisp up beautifully.

Once golden and fragrant, remove from the oven. Squeeze over fresh lemon juice (or apple cider vinegar) for a zesty finish, and sprinkle with parsley before serving.
