Sweet’n’Sour Pork Stuffed Capsicums
Preheat oven 175C/350F/Gas Mark 4
500g pork mince/chicken/beef/lamb
1 brown onion chopped
4 garlic cloves chopped
1 tsp chilli flakes
2 T coconut oil
1 carrot grated
Salt and pepper to taste
1 cup bone broth
4 capsicums (colour of your choice), cut the top off and remove seeds
2 cups finely chopped pineapple
2 shallots sliced for garnish
handful coriander for garnish
In a large pan over medium heat add coconut oil, onion, garlic & chilli flakes. Cook until onion is translucent. Add pork mince and brown. Pour in bone broth, add carrot and pineapple and cook for 10 mins or until broth has reduced. Remove from heat.
Arrange capsicums on a lined baking tray, with a spoon stuff each capsicum half with the pork mixture. Bake for 25 mins or until capsicums have softened. Remove from oven. On a plate spread some quinoa, sit capsicum in the middle and pour sweet’n’sour sauce over the top and garnish with sliced shallots & coriander.
