Are you looking for different ideas to introduce more vegetables into your meals. These delicious and tangy Sweet’n’Sour Pork Stuffed Capsicums are just the the thing. Quick and easy to make and full of nutrients.Β
(serves 4)
Preheat oven 175C/350F/Gas Mark 4
In a small saucepan add water and quinoa. Bring to the boil and then reduce heat to lowest heat possible. Simmer for 10-15 mins until all moisture is gone, (be careful not to burn) and turn off heat. Allow to cool with lid on. Once cool fluff with a fork and then it is ready to use.
In a large pan over medium heat add coconut oil, onion, garlic & chilli flakes. Cook until onion is translucent. Add pork mince and brown. Pour in bone broth, add carrot and pineapple and cook for 10 mins or until broth has reduced. Remove from heat.
Arrange capsicums on a lined baking tray, with a spoon stuff each capsicum half with the pork mixture. Bake for 25 mins or until capsicums have softened. Remove from oven. On a plate spread some quinoa, sit capsicum in the middle and pour sweet’n’sour sauce over the top and garnish with sliced shallots & coriander.
