Warming Winter Porridge

My Warming Winter Porridge is a nourishing meal to help keep you satiated longer. I love porridge – it brings delight and enjoyment to every mouthful and will keep you warm and cozy through these cold winter days. I love to add the sweet aromatics of vanilla bean which makes my porridge absolutely irresistible. I also like to add a bit of crunch with Buckinis.

What are Buckinis? I hear you ask.
Well Buckinis are made with Buckwheat. Buckwheat, despite its name, is not actually wheat and is gluten free. In fact it is not even a grain, it is a fruit. It belongs to the strawberry family!
Buckwheat alkalises our bodies, and is a rich source of protein, rutin(antioxidant) and manganese.

Amazing what you can find out when you change your eating lifestyle. I also like Buckinis in a trail mix and home made chocolate – Yum!!!

Ingredients

  • 1/2 cup gluten free oats –Β (I used Bob’s Red Mill Old Fashioned Rolled Oats)
  • 1 cup water
  • 1/2 tsp vanilla bean paste
  • 1 T raspberries
  • 1 T blueberries
  • 1 T shredded coconut
  • 1 tsp rice malt syrup
  • 1 T buckinis (buckwheat groats)

Method

Put oats into a pot with 1 cup of water,Β bring to boil and turn heat down low to simmer for 10 mins, once thickened add vanilla bean paste and mix through.

Serving Suggestions

Serve toppedΒ with raspberries,Β blueberries,Β shredded coconut, rice malt syrup and top with buckinis. You can also add some coconut milk or cream if you prefer.
