makes 18 balls = 2 – 3 balls per serve

  • 1/2 cup almond flour
  • 1 cup desiccated coconut (plus extra for rolling)
  • 2 scoops (22g) Collagen powder
  • 4 scoops (120g) Vanilla Protein powder
  • 1 tsp ground turmeric
  • Zest and juice of 1 lemon
  • 8 medjool dates, seeds removed and chopped
  • 1 T coconut oil
  • 1 T rice malt syrup or maple syrup


In a food processor, combine almond flour, desiccated coconut, collagen powder, vanilla protein powder, ground turmeric, and the zest of one lemon. Add in the chopped dates. Pulse the ingredients until well combined.

Pour in the coconut oil, rice malt syrup (or maple syrup), and lemon juice then process the mixture until a soft and delicious dough forms.

Using your hands, roll the dough into evenly sized balls. Roll each ball in desiccated coconut until evenly coated.

Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to firm up.  Once chilled, your Lemon Protein Balls are ready to enjoy!
