My absolute favourite breakfast or post-workout snack is French Toast. This recipe is simple, yet so delicious and good for you. Add a touch of decadence to your breakfast menu with this luscious French Toast recipe.
Mix ingredients together except coconut oil and soak 2 pieces of gluten free bread into the mixture.
Heat a pan to medium heat and add 1 T coconut oil. Cook both sides of the bread until golden. Repeat.
Serve with a squeeze of lemon juice, a drizzle of rice malt syrup, blueberries and raspberries and a dollop of coconut cream and coconut flakes.
Vegan option: Omit eggs and use 2 T of coconut yoghurt or thickened coconut cream.
