This one is a favourite of my grandsons, their poppy likes them also! Turn Caramel Bliss Balls into Caramel Bliss Balls (Robots). Such a novel idea.
Preheat oven 180°C / 350°F / Gas Mark 4
3 cups of nuts (I use 1 cup almonds, 1 cup cashews & 1 cup of walnuts)
2 cups Medjool dates (16 Dates)
1/2 cup coconut oil
1/4 cup cacao butter
1/4 cup rice malt syrup
1/2 tsp vanilla powder
1 T cacao powder
1/2 cup coconut for rolling
Place nuts on a baking tray and roast in the oven until they start to brown about 5 – 8 mins.
In the meantime melt the cacao butter, coconut oil, dates and rice malt syrup in the microwave or over medium heat on the stove.
Once nuts are ready place into a food processor and process until a very fine meal texture. (Allow them to cool as the mixture can be quite hot.)
Add the date mixture, cacao and vanilla and continue processing to combine.
Shape mixture into small balls and roll in coconut for bliss balls or press into a robot silicon mould. Store in the fridge. You can eat these straight from the fridge, or bring to room temperature to soften slightly. I like them straight out of the fridge.
