  • Juice of 1/2 lemon
  • 1 tsp vanilla extract or vanilla bean paste
  • 1–2 tsp rice malt syrup or maple syrup (optional, to taste)
  • Pinch of sea salt

Optional protein boost: 1 scoop vanilla protein powder (stir in after cooking)

Preparation

Soak the oats: Place the steel-cut oats in a bowl, cover with water, and add 2 T of lemon juice. Leave to soak overnight, then rinse well in the morning.

Method

Combine the soaked and rinsed oats, water, coconut milk, lemon zest, lemon juice, vanilla, and sea salt in a small saucepan.

Bring to a gentle simmer and cook for 10–12 minutes, stirring occasionally, until the oats soften and thicken.

Taste and add rice malt syrup or maple syrup if you’d like extra sweetness.

Remove from heat and stir through your protein powder if using.
