Seafood Marinara


Seafood Marinara is one of my hubby’s favourite dishes, full of omega-3 fatty acids, minerals and vitamins. It is super fast and easy to make even though it looks fancy! Traditionally served with spaghetti, I opted for zucchini noodles instead. Super delicious!

500g marinara mix
6 garlic cloves, chopped
10ml brandy (optional)
1 T coconut oil
1 red onion, diced
1 tomato, diced
6 shallots, sliced
2 T sundried tomatoes
2 small hot chillies
2 T sliced olives
Salt and pepper to taste
1 tin coconut cream (400ml)

Heat a large pan over med – high heat with 1 T coconut and sauté marinara mix with half the garlic and add red onion for one minute. Pour in the brandy (if using) & flame. (for this you will need to ignite the liquid in the pan, using either a match or lighter. The alcohol will burn off)
Add the rest of the garlic and remaining ingredients and simmer for two minutes. To thicken the sauce use a mix of 1 tsp arrowroot powder & 1-2 tsps water and mix through marinara mix.

Serve on a bed of zucchini noodles.
