Chocolate Protein Waffles

The kitchen is a great place for communicating with the family – it is the heart of our house. As I was thinking about what to make myself post workout, I was listening to my sons talking about the computer games they play. When they talk computer games it is like another language to me!

As they were waffling to me, I said ” right I will make waffles”

Ingredients

(serves 2)

Preparation

Preheat waffle iron. (I have a non-stick grid which does not require any greasing, however you may need to grease your grids first. Lightly brush the grids with coconut oil)

Method

Mix all ingredients together until well combined and smooth. Pour 1/3 cup of mixture into waffle iron (less or more depending on the size of your waffle iron)

The waffle should be ready after a minute or two. Remove carefully from hot waffle iron and place on serving plate. Repeat with the remaining mix (makes 4)

Serving Suggestions

Top with a dollop of coconut yoghurt, blueberries, pepitas, chopped almonds and a drizzle of rice malt syrup!

Pepitas also called pumpkin seeds are an excellent source of tryptophan and glutamate. These two power houses of amino acid are so beneficial for nervous irritability, anxiety and depression. Pepitas also provide good quality protein, it’s an all round champion.

Why not add some into a meal today for a little extra added crunch and know that you are providing yourself with extra nutrients.
