Fruit and Nut Chocolate Bark

Some days you just gotta have some chocolate so why not make your own healthy version of fruit and nut chocolate bark to have a little indulgence! Cacao has such wonderful health benefits and a bitter taste – I’m a bit partial to bitter flavours.

It is also a good source of antioxidants to help improve your mood and make you feel happier. There is no secret that cacao triggers the release of endorphins so that we feel pleasure!   It is so quick and easy to make and full of antioxidants plus it will make you feel good!

I always feel happier and pleased after a piece of dark chocolate, don’t you?

Ingredients

  • 1 cup coconut oil
  • 3/4 cup cacao powder
  • 1 tsp vanilla extract
  • 1/4 cup rice malt syrup
  • 1 T unsweetened dried cranberries
  • 1 T organic raisins
  • 1/4 cup chopped almonds, macadamias or hazelnuts

Method

To make the chocolate use a double boiler, or create a water bath using a heat safe bowl and a pot of boiling water.

Place the cacao powder, coconut oil, rice malt syrup and vanilla into your bowl over the heat and once melted whisk until well combined. Add in cranberries, raisins and chopped nuts.

Using either a square or rectangle baking tray lined with baking paper, spread the chocolate mixture evenly over the tray. Refrigerate until firm (about 40 mins). Take out and break up into pieces and keep in the fridge.

Final Thoughts
