Quinoa Choc Chunk Cakookies

Quinoa Choc Chip Cakookies

Preheat oven 180C/350F/Gas Mark 4


1/2 cup coconut oil
3/4 cup rice malt syrup
2 cups cooked quinoa
1 cup almond meal
1/2 cup coconut flour
1 cup desiccated coconut
1 cup chopped 90% dark chocolate
1 tsp bicarbonate of soda
2 T hot water


In a bowl, mix together cooked quinoa, almond meal, desiccated coconut and coconut flour.

Melt coconut oil and rice malt syrup together either in a saucepan over medium heat or in a bowl in the microwave.

Once melted, mix together the bicarb-soda and hot water and pour into the hot melted oil mix and immediately pour over the dry ingredients.

Mix until combined and then fold through chopped chocolate chunks.

I like to get a tsp of mixture and roll it, then press down onto lined baking tray with the palm of my hand or you can simply place spoonfuls on a lined baking tray.

Cook in oven for 15 mins or until golden. Cool on wire rack

These also taste great with a scoop of home-made ice cream sandwiched between 2 cakookies!
