Wholesome Goodness: Carrot Cake Muffins Packed with Nutritional Benefits. It can be difficult at times in finding a baked treat that has the combination of delicious and nutritious. It can sometimes feel like a quest for the holy grail lol!

Fear not, for I’ve crafted a recipe that hits that sweet spot – introducing my mouthwatering Carrot Cake Muffins! Packed with wholesome ingredients, these muffins are a delight for your taste buds and a boost for your health. Let’s delve into the goodness of the star ingredients:

Carrots: The Vitamin A Powerhouse.  At the heart of these muffins lies a generous dose of grated carrots. These vibrant orange wonders are a rich source of vitamin A, a nutrient crucial for good vision, immune function, and skin health. With a bonus of fiber, they support digestion and help maintain a healthy weight (1).

Vanilla Protein Powder. Protein powder is a great source of dietary protein and can boost your overall daily intake of essential amino acids. The amino acids we get from our protein supports muscle repair and growth (2). Also providing sustained energy keeping us feeling full and satisfied for longer. Plus in these muffins it enhances the flavours and adds a creamy rich element that you are going to love. 

The combination of protein, healthy fats, fiber, and various vitamins and minerals makes these muffins a balanced snack option. Additionally, the absence of refined sugars and gluten makes them suitable for a range of dietary preferences and needs. I hope you enjoy these delicious and healthful carrot cake muffins!

Ingredients

  • 500g/17 1/2 oz carrots grated
  • 150g vanilla protein powder (5 x 30g scoop)
  • 200g almond meal
  • 1 tsp GF baking powder
  • 60ml/2fl.oz extra virgin olive oil
  • 3 organic eggs
  • 2 tsp vanilla extract
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger

Preparation

Preheat oven 160°C/325°F/Gas Mark 3

Put muffin papers into a muffin tray. (I made 10 large muffins) you could easily adjust to make 12.

Method

Combine together carrots, protein powder, almond meal, baking powder, olive oil, eggs, vanilla, maple syrup, cinnamon, nutmeg and ginger.

Mix until well combined – I like to wet my hands and get into the mix, it really helps to get the ingredients to mix together plus it is great to be hands on! 

Pack each muffin case with 1/2 cup mixture, pressing down to make sure each muffin case is evenly distributed and then smooth the top. (If you’re aiming for 12 muffins you will need to use a bit less mixture)

Bake in the oven for 30 mins and poke with a skewer or toothpick to check if ready. If it comes out dry they are ready!

Remove from heat and allow to cool in the tray. 

Serving Suggestions

You can serve alone or top them with some Greek style yoghurt and crushed walnuts as I did.

You could also use my Cashew Cream Vanilla Icing.
