Refresh Smoothie

So many interesting facts on the health benefits of Watermelon which consists mostly of water yet provides Vitamin A, B6, C antioxidants and amino acids which contain anti-inflammortary properties and did you know it was also classed as a Vegetable? Now I have 3 Chefs in the house and they all have learned that anything with seeds is a fruit!! So who or what determines whether something is a fruit or a vegetable? And do you care? I did a search on google (is Mr.Google correct?) and it says that pumpkin, cucumber and squash is a fruit also? Interesting isn’t it? What’s your opinion?

I like watermelon no matter what, do you? I hope you enjoy my Refresh Smoothie!

Ingredients

(serves 2)

  • thumb size piece ginger
  • 1/2 lemon (peel removed)
  • 1 apple
  • 8 frozen strawberries
  • 1 slice watermelon
  • 2 stalks fresh mint leaves
  • handful spinach
  • 4 beetroot leaves
  • 1/2 tsp cinnamon
  • 1/2 tsp turmeric
  • 60g vanilla protein powder ( I use I ❀️ Vanilla ProteinΒ or Thriving Family Smooth Vanilla)
  • 3 cups coconut water

Preparation

*Tip:Β To ensure that you get a smooth textured smoothie, it is recommended to blend your greens (i.e. spinach, beetroot leaves &) with the liquid first, then add the remaining ingredients.

Method

Put all ingredients into a blender and blend until smooth!
