Who doesn’t love Rocky Road? Treat yourself to this delicious healthy alternative with good gut health “jellymallow!”
What is “jellymallow?” it is a quick mix of homemade jelly whisked until fluffy!
For the jellymallow you will need:
1/4 cup of juice – (I used mixed berries juice from strained jam get recipe here!)
1 cup boiling water
3 T gelatine
Mix boiling water and juice in a saucepan over medium heat. Add in gelatine and whisk until gelatine has resolved and the mixture is light and fluffy (about 5 mins)
Pour into silicone chocolate moulds or a silicon muffin tray (only about 1/4 deep) I used a mixture of both chocolate moulds (12) and muffin tray (6, then chopped into quarters)
Put into the fridge for at least an hour to set.
Rocky Road Recipe:
Ingredients:
1/4 cup each of:
almonds* – (roughly chopped)
walnuts* – (roughly chopped)
macadamia nuts* – (roughly chopped)
pecans* – (roughly chopped)
1/4 cup coconut flakes
jellymallows (I used all of the above quantity)
1 cup coconut oil
3/4 cup cacao powder
1 tsp vanilla extract
1/4 cup rice malt syrup
1 T cacao butter
Method:
Place all the nuts, coconut flakes and jellymallows into a deep bowl. Make the chocolate in a double boiler, or create a water bath using a heat safe bowl and a pot of boiling water. Melt the cacao powder, coconut oil, cacao butter, rice malt syrup and vanilla together and then whisk until well combined.
pour over nut mixture and mix until well combined and all ingredients are coated in chocolate.
Spread out on to a lined biscuit tray to what thickness you would like and place in the fridge for 2-3 hours to set. Then slice into desire portion sizes and enjoy!
Keep in the fridge or you may wish to freeze your portions for a frozen chocolatey treat!
