Avocado Dressing in a Glass Jug

Creamy, vibrant, and full of flavour this Zesty Avocado Dressing is one of those recipes that brings everything together. Whether you drizzle it over salads, spoon it onto grain bowls, or use it as a dip for veggie sticks, it adds a refreshing lift with every bite.

Made with ripe avocado, fresh lemon juice, extra virgin olive oil, and a pinch of cumin, it’s as nourishing as it is delicious. The healthy fats from the avocado and olive oil help keep you feeling satisfied, while the zing of lemon and herbs brightens up your plate.

It’s quick to whip up in a blender and can easily be adjusted for your preferred consistency. Perfect for meal prep too,  store it in a jar in the fridge and enjoy throughout the week!

Ingredients

(Serves 4)

  • 1 ripe avocado
  • Juice of 1 lemon
  • 1 T extra virgin olive oil
  • 2 T water (adjust for consistency)
  • 1/2 garlic clove, finely grated or minced
  • 1/2 tsp ground cumin
  • Pinch of sea salt

Optional: a few coriander leaves or fresh parsley for extra brightness

Method

Blend all ingredients until smooth and creamy. Add extra water 1 tsp at a time if needed to thin. Store in the fridge for up to 3 days.

 

Serving Suggestions

Great served as a dipping sauce also with the Oven Baked Hot’n’Spicy Chicken Legs!  the creamy coolness pairs perfectly with the spicy kick! ????️????
